Jason is the General Manager of Rock’N Fish, a popular “American regional cuisine” restaurant located in Manhattan Beach. With a degree in Hospitality Management and a background in food service, Jason easily slipped into the role of General Manager at Rock’N Fish. He walks us through a typical shift and how his focus is constantly on the past, present, and future at the same time.

>> My name's Jason Cervantes, I'm general manager at Rock'n Fish in Manhattan Beach. You know, I arrive at work and try and acclimate myself to how the-- what the vibe is like, what the energy's like, that can go a lot of different ways. But, essentially look at the books for the night and see what reservations we're looking like, see if I have any bigwigs coming in or anything. You look at the reservation notes, see if there's anything you need to pay close attention to. Make sure the money's all lined up from the day before, look at sales, see how sales for this-- for whatever day around this year how that compared to last year, see what the week's looking like compared to last year, see if there's any special events we have coming up soon that we have to prepare for, make sure staff is all appropriately lined up for the day, make sure nobody's called in sick and if somebody's call in sick make sure I cover that, make sure the facility's all clean and well-maintained and all the machinery's in good working order, and if something's not, make sure I get people in and line people up to fix it. If it's my office day, then there's invoices to code, there's spreadsheets to look at and dial in. Different people coming in to-- you know, different vendors wanting to show me new products and stuff that they're featuring for whatever month. Yeah, it's always what's going on today that I can make sure that we do tightly, anything from previous days that we need to work on or look at and fix, and looking ahead to what might be coming down the line.
