TC is a sous chef with Broad Street Ministry, a Philadelphia based Christian ministry that serves several hundred free meals a day to the city’s homeless and others in need. TC explains how this job is more than just cooking; after meal service he regularly steps out of the kitchen and helps with any other social work aspect of the ministry.

>> Okay, my name is TC Shillingford. I am the sous chef at Broad Street Ministry, which is a non-profit in Center City that serves vulnerable Philadelphians with meals and a multitude of other services throughout the week. So the sous chef is the second command in the kitchen, at least the way we have to structured there. And so I am responsible for helping to guide the kitchen team to making seven meals a week for between 2 and 400 people each meal. And those are three-course meals. We bake our own bread in-house. We provide a good meal during the day. And we serve dessert every day that we make in-house. So it's a lot of work by a fairly small team. And it happens constantly. So that's the main thrust of the job. That is the sort of basic requirement. But at a place like Broad Street, you are providing direct service to your guests. And so just staying back in the kitchen is frankly not an option. So you jump in everywhere you can. You help design programming. You help run the services. You jump in where help is needed constantly. And it is constantly needed. So yeah.
